Pork Tenderloin With Roasted Apples & Carrots

1/2 Granny Smith Apple
10 Carrots

Ingredients

  • 1lb Pork tenderloin (or whatever closest to that)
  • 2 apples – your choice, I prefer Granny Smith for this
  • minced garlic
  • baby carrots

Directions

  1. Cut slits in tenderloin
  2. sprinkle w/ salt + pepper
  3. cut apples into thin slices
  4. fill slits w/ apple slices and garlic
  5. Sprinkle pork w/ cinnamon
  6. Set pork in crock pot and Cook 6-8 hours on low
  7. Enjoy 4oz of pork and drizzle apple over top
  8. Spoon out carrots as side
