- 1 large sweet Potato
- 1/2 cup black beans
- 1/4 white onion, chopped
- 2 roma tomatos, chopped
Directions
- Preheat oven to 350
- Peel sweet potato, cut into 1/4″ slices
- Coat cast iron pan w/ oil; line cast iron pan with potato slices
- Sprinkle w/ shredded chicken
- Sprinkle w/ 4oz blean beans
- Cook for 30-45 mins until potatoes are soft
- Top w/onions and tomatoes
