The New Big Salad

Ingredients

  • 1lb of Flank Steak or Skirt Steak
  • 2-3 Cups of Spinach
  • 1/2 Cup Pepperoncini’s
  • 1 Pacakge Grape Tomatoes
  • 2 TBSP Grainy Mustard
  • 2 TBSP Apple Cider Vinegar
  • 1 TSP Olive Oil
  • 2 TSP Honey

Directions

  1. Cook your steak! I prefer salt and peppering both sides of the steak and searing it for 2 minutes on each side over medium high heat and then letting it rest for 5 minutes. This produces a very nice medium rare with the thin cut of steak. If you prefer it a little more doneness to your meat then pop your frying pan into the oven on 350 for 5 minutes.
  2. Make your dressing: Put the grainy mustard, apple cider vinegar and honey in a small bowl and whisk. Then slowly blend in your EVOO for nice texture.
  3. Assemble the salad: Cut your steak, put your spinach in a bowl toss in the tomatoes and pepperoncini’s, toss in the dressing and you are good to go!
