Ingredients

  • Leftover chicken from Monday
  • 1 large sweet Potato
  • 1/2 cup black beans
  • 1/4 white onion, chopped
  • 2 roma tomatos, chopped

Directions

  1. Preheat oven to 350
  2. Peel sweet potato, cut into 1/4″ slices
  3. Coat cast iron pan w/ oil; line cast iron pan with potato slices
  4. Sprinkle w/ shredded chicken
  5. Sprinkle w/ 4oz blean beans
  6. Cook for 30-45 mins until potatoes are soft
  7. Top w/onions and tomatoes
