Broccoli Rice, Chicken Thighs & Bacon

Ingredients below make 2-3 servings

Ingredients

  • 1lb of Chicken Thighs, remove excess fat
  • 1 bag of Frozen Broccoli Rice (you can make your own as well doing something like this)
  • 3 strips of nitrate free bacon
  • 2 eggs

Directions

  1. Season your chicken. Brining is probably your best bet. If you don’t have that kind of time salt, pepper and garlic powder always does the trick.
  2. Cook your bacon in a skillet. 1-2 minutes each side until crispy and remove. Pat dry in paper towel and set aside.
  3. Cut up your chicken and stir fry it in the bacon fat until it reaches 165 degrees.
  4. Once the chicken is fully cooked, add in your bag of broccoli rice and cook.
  5. Remove chicken stir fry, place pan back over heat and crack in 2 eggs. Cook until they are at your desired level of doneness.
  6. Place eggs on top of stir fry and nosh!
  7. You can add extra spices and ingredients to this to make it more filling. Cilantro, mint, basil, peppers, carrots, snap peas..etc all are nice additions to the flavor profile.
