Ingredients
flat or skirt steak – 1lb
one sweet potato
1 cup of green beans
tooth picks
salt n pepper
spinach – 2 cups
vinegrette
baby carrots
Directions
1. Slice sweet potatoes into 1/4″ slices, put into stove top pan with green beans and cook for 10mins or until soft. Season as needed
2. Let potato and green beans cool
3. Cut raw steak into 2′ wide and 6″ long strips (or something similar)
4. Place 2-3 potato strips and 3-5 green beans into steak, roll up tightly and put toothpick thru center
5. Place rollups back on stove top pan and cook for 5-7 minutes or until steak is tender
6. Make side salad with spinach cut up carrots and vinegrette
