Ingredients
- 1 haas avocado
- 2 eggs
- 1 strip of turkey bacon
- 1 cup of spinach
- baby carrots
Directions
- Cut avocado in half, spoon out center core
- Use spoon to Spoon out about 1/4 of avocado on both sides just to reduce some of the fat and hole the egg
- Crack egg and put in one avocado half; repeat on other half
- spring w/ salt and pepper
- cook in oven @ 325 degrees for 15 mins or until egg is cooked
- Cook 2 pieces of turkey bacon
- Sprinkle half of bacon on top of one avocado half and repeat
- Prepare side salad w/ spinach, carrots, your choice of dressing
