Ingredients

  • 1 haas avocado
  • 2 eggs
  • 1 strip of turkey bacon
  • 1 cup of spinach
  • baby carrots

Directions

  1. Cut avocado in half, spoon out center core
  2. Use spoon to Spoon out about 1/4 of avocado on both sides just to reduce some of the fat and hole the egg
  3. Crack egg and put in one avocado half; repeat on other half
  4. spring w/ salt and pepper
  5. cook in oven @ 325 degrees for 15 mins or until egg is cooked
  6. Cook 2 pieces of turkey bacon
  7. Sprinkle half of bacon on top of one avocado half and repeat
  8. Prepare side salad w/ spinach, carrots, your choice of dressing
