Ingredients

  • 1 bag of microwave quinoa
  • 1 can of black beans
  • 1/2 cup shredded carrots
  • 1 cup cup spinach
  • 2 eggs
  • Sauce of choice
  • 1 avocado

Instructions 

  1. Pour the black beans into a sauce pan and heat it up
  2. Microwave the quinoa per the instructions on the bag
  3. Poach the eggs
  4. Get 2 bowls and divide the quinoa out evenly
  5. put 1/4 cup beans on top
  6. put 1/2 cup spinach on top
  7. put 1/4 cup carrots on top
  8. divide avocado into 2 halves. dice up. place 1/2 avo on top.
  9. cover in 2 TBSP of sauce
  10. Eat!!
