Ingredients
- 1 bag of microwave quinoa
- 1 can of black beans
- 1/2 cup shredded carrots
- 1 cup cup spinach
- 2 eggs
- Sauce of choice
- 1 avocado
Instructions
- Pour the black beans into a sauce pan and heat it up
- Microwave the quinoa per the instructions on the bag
- Poach the eggs
- Get 2 bowls and divide the quinoa out evenly
- put 1/4 cup beans on top
- put 1/2 cup spinach on top
- put 1/4 cup carrots on top
- divide avocado into 2 halves. dice up. place 1/2 avo on top.
- cover in 2 TBSP of sauce
- Eat!!
